Canning Time: How to Store Food After You Open the Jar

It's been a great summer, perfect for my garden.

I have been busy canning bushels of fruit and veggys for this fall and winter

One of the main questions I am asked is: after opening a jar of canned food, what is the best way to refrigerate the remaining food if not all of it is eaten?

The best way to keep food fresh after opening is to replace the lid and ring with a clean, leakproof lid with a gasket on the jar. Discard the lid as all canning lids are to be used only one time. The rings should be washed of all debris and stored.

Why use a leakproof lid? Leakproof lids extend the life of food in a refrigerator. They can also be used for freezing food. Most importantly, using plastic containers for food is not good. Plastic leaches; glass does not. Replace your containers with glass jars for your herbs, grains, pasta, sugar, coffee, tea etc.
